Ingredients

  • 1 lbsground beef
  • 1 lbsground pork
  • 1 lbsground lamb
  • 2-3eggs
  • 1 cupBread crumbs (Panko)
  • 4-5Garlic cloves finely chopped
  • 1-2 TbspCalabrian chili paste or red curry paste
  • 1 cupParmigiano-Reggiano
  • 1/3 cupMilk
  • 1bushel Parsley (rough chop)
  • 1 tspSalt & pepper each (then to taste in sauce)
  • (mix in some leftover peppers finely chopped too?)
  • Butter the pan

Steps

  1. 1

    Put all the meat in a bowl and coat with eggs

  2. 2

    Once sticky with eggs, add the salt, pepper, garlic, chili paste and mix by hand.

    Add the Parmigiano-Reggiano and breadcrumbs and mix

  4. 4

    Then add the milk and keep mixing

  5. 5

    Finally add a lot of parsley and mix in

    Coat a large baking sheet with butter and stack the meatballs tightly on the pan (45 grams each, about an ice cream scoop size)

    Roast them at 475^F for 6-7 minutes, rotating the pan once or twice (or fry in a pan)

    Submerge the meatballs in sauce and simmer for an hour.
