Are you a mom of young kids who demand for variety in their lunch boxes?
Well I am.
Both my kids are foodie(just like me) and they enjoy variety of food.
I always try to full fill their wish and like to give a spin to regular recipes.
Keeping in mind food not only be interesting should also be healthy.
So this recipe here is one such dish which is different than regular parathas and also is healthy as it has been shallow fried.

Keeping in mind food not only be interesting should also be healthy.
So this recipe here is one such dish which is different than regular parathas and also is healthy as it has been shallow fried.

Grate cauliflower and potatoes.

To the cauliflower add grated boiled potatoes, crushed chilli and garlic, salt, turmeric, red chilli, cumin and coriander powders, chopped greens and mix well.

The mixture must not be loose. (If it looks loose then you may add some roasted chick pea flour or bread crumbs or fine semolina, my mixture was good to go so I did not add any of these)

Keep paneer in like warm water for 5 minutes and make thin slices out of it. Apply 2-3 tablespoons of the veg stuffing over one slice of the paneer.

Top it with another slice. Prepare all of the parcels this way.

Heat a grill or tawa, add some ghee.

Place prepared paneer parcels on the tawa and roast from both sides.

After 2-3 minutes flip the paneer parcels. Let them roast from other side too. Let them cool down a bit.

Take a lemon sized ball of dough and roll into a averagely thin disc.

Place one parcel in the center.

Cover it from all sides to make a parcel.

Make all such parcels and keep them ready.

Add some ghee on a griddle and place parcels on it.

Carefully flip them over and cook on the other side as well.

Cook the sides too like I have shown in the picture.

You could deep fry these parcels. But we want them to be healthy😁 don't we!!!

Enjoy these healthy and delicious paneer parcels as a brunch or pack them for school or office.
