Carne Asada Tacos with Cheese Crust (Keto)

Cooking Instructions
- 1
Grill the beef until medium, then cut it into small cubes. Sauté the cubes with a little beef tallow, adding salt and pepper to taste. Set aside.
- 2
Grate the cheese and place it in a skillet over medium heat until it melts and turns golden. Remove to a plate while still hot.
- 3
Chop the vegetables to serve with the taco. Add the beef to the cheese crust, then top with the vegetables and salsa as desired. Enjoy!
- 4
Done! Enjoy your meal.
- 5
For the salsa: Heat a little oil in a skillet and quickly toast the chiles, being careful not to burn them or they will taste bitter. Separately, place the tomatoes in a Ziploc bag and microwave for 4 minutes. Add the tomatoes to a blender along with the chiles, oil, garlic, cilantro stems, and salt. Blend well. The salsa is ready!

This recipe was originally created by my father when I was a child. He started experimenting with spices like Cocoa and Cinnamon and how they are used in Central and South America. With a love for Chili and a passion to make authentic dishes, this recipe was born. Growing up, I started helping him make it. With a few tweaks along the way, it has been my go-to chili recipe ever since. Jesse Wilson -
