Just like stir-fried bitter melon with eggs, but chayote has a naturally sweet flavor, so you don't need to add any sugar.

Peel the chayote and cut into thin strips. Crack the eggs into a bowl and beat well. Heat a pan, add the white part of the green onion and sauté until fragrant, then add the chayote and stir-fry evenly.

When the chayote softens, season with 2 tablespoons fish sauce (about 30 ml) and 1 teaspoon seasoning powder. Once seasoned, add the eggs and stir well. Turn off the heat, then top with chopped green onions and black pepper.
