Cut Spring Onions into small pieces add with the Olive Oil and Butter to a large pan. Add the rinsed Peas and start cooking gently. Stir occasionally.

Meanwhile chop Mushrooms into small pieces and grate the Cheese.

Once the Onions and Peas are just soft, add the Mushrooms and cook for a further 5-10 minutes until the Mushrooms are soft.

Add the eggs, give a good mix around and continue on a low temperature until just cooked.

Tip the grated cheese over everything, mix well in and continue heating until the cheese has melted into the other ingredients. Serve with toast! Enjoy!!
