Ingredients

Serves 2 servings
  1. 1.1 lbsthin rice vermicelli noodles (about 500 g)
  2. 7 ozroasted pork belly or boiled pork belly (about 200 g)
  3. Fermented anchovy sauce (mắm nêm)
  4. Roasted peanuts, shelled (do not crush)
  5. Young jackfruit (if available)
  6. 1small slice pineapple, a few garlic cloves, sugar, lime, Hoi An chili sauce
  7. Fresh vegetables: lettuce, mint, bean sprouts, cucumber, assorted fresh herbs as you like, shredded green papaya (if available)

    Boil the pork with a pinch of salt. Once cooked, transfer the pork to cold water and let it soak until completely cool—this keeps the meat white and prevents discoloration. Drain and slice thinly.

    Alternatively, you can use roasted pork belly, cut into small pieces, or thinly sliced boiled pig ear. You can also add thinly sliced beef sausage or fermented pork sausage if you like.

    Wash and chop the fresh vegetables. Slice the cucumber thinly.

    If you have young jackfruit, slice it thin, boil until tender, then soak in cold water to keep it white. Drain and chop finely. (If you don't have young jackfruit, you can skip this step.) If you have green papaya, shred it thinly and mix with the fresh vegetables.

    The most important part of this dish is the mắm nêm! In Da Nang, everyone knows Dì Cẩn's mắm nêm is famous. Luckily, you can now find this sauce distributed all over Vietnam. (You can search online to find it.)

    To make the sauce: Finely chop 1 small slice of pineapple (about 1 tablespoon), crush a few garlic cloves (about 2 teaspoons), and add to a bowl with 2 tablespoons mắm nêm, 1 tablespoon hot water (skip the water if you prefer it saltier), and 1 tablespoon sugar or less to taste. Stir well. If using pre-mixed mắm nêm with chili, you don't need to add fresh chili. The sauce is a bit salty, so adjust with more hot water and sugar to taste, but don't dilute it too much or it will lose flavor when mixed with the noodles. No need to add lime.

    Sauté a little shallot in oil until just golden, then remove from heat—don't let it burn. The shallot oil will add aroma and keep the noodles from being dry. You can add a bit of annatto oil for color if you like.

    To serve: Place the vegetables in a bowl, add the noodles on top, then arrange the pork over the noodles. Pour the sauce over and sprinkle with roasted peanuts. Enjoy!

    If you like it spicy, crush extra fresh chili into the sauce, or for the best flavor, add a little Hoi An chili sauce to your bowl. (Don't use bottled chili sauce—it won't taste right!)
