I named this dish ‘Village’ Rice Noodles because my mom used to cook it for me when we lived in a small village long time ago. It’s a very simple dish and it doesn’t use any meat in it because at that time we didn’t have enough money to buy meat for food. Ingredients

  • 200 grrice noodles, soaked in warm water for 5-10 minutes, drained
  • 2 Tbspvegetable oil
  • 1medium carrot, julienned
  • 1 bunchmustard greens, cut 1 cm
  • 3cabbage leaves, roughly chopped
  • 1 tspsalt or to taste
  • 1/2 tspwhite pepper powder or to taste
  • 1/2 tspmushroom bouillon
  • 1 Tbspsweet soy sauce
  • 120 mlwater
  • 2green onions, thinly sliced
  • Ground spices:
  • 8 clovesshallots
  • 6 clovesgarlic
  • 2 pcscandle nuts
  • For the complements:
  • Fried shallots
  • Cucumber and carrots pickles
  • Hard boiled eggs/scrambled eggs
  • Bird eyes chilies 🌶

Steps

  1. 1

    Heat vegetable oil in the wok over medium-heat. Sauté the ground spices until fragrant.

  2. 2

    Add carrot, cabbage, and mustard greens stalks. Add water. Cook until the vegetables a bit soft.

  3. 3

    Add mustard greens leaves. Mix well.
    Season with salt, white pepper powder, and mushroom bouillon.

  4. 4

    Add rice noodles and sweet soy sauce. Mix well again.

  5. 5

    Lastly, add green onions. Remove from the heat. Serve warm with the complements. Yum! 😋
