I named this dish ‘Village’ Rice Noodles because my mom used to cook it for me when we lived in a small village long time ago. It’s a very simple dish and it doesn’t use any meat in it because at that time we didn’t have enough money to buy meat for food. Ingredients

  1. 200 grrice noodles, soaked in warm water for 5-10 minutes, drained
  2. 2 Tbspvegetable oil
  3. 1medium carrot, julienned
  4. 1 bunchmustard greens, cut 1 cm
  5. 3cabbage leaves, roughly chopped
  6. 1 tspsalt or to taste
  7. 1/2 tspwhite pepper powder or to taste
  8. 1/2 tspmushroom bouillon
  9. 1 Tbspsweet soy sauce
  10. 120 mlwater
  11. 2green onions, thinly sliced
  12. Ground spices:
  13. 8 clovesshallots
  14. 6 clovesgarlic
  15. 2 pcscandle nuts
  16. For the complements:
  17. Fried shallots
  18. Cucumber and carrots pickles
  19. Hard boiled eggs/scrambled eggs
  20. Bird eyes chilies 🌶

Cooking Instructions

    Heat vegetable oil in the wok over medium-heat. Sauté the ground spices until fragrant.

    Add carrot, cabbage, and mustard greens stalks. Add water. Cook until the vegetables a bit soft.

    Add mustard greens leaves. Mix well.
    Season with salt, white pepper powder, and mushroom bouillon.

    Add rice noodles and sweet soy sauce. Mix well again.

  5. 5

    Lastly, add green onions. Remove from the heat. Serve warm with the complements. Yum! 😋
