Ingredients

3,4 servings
  • For Dough
  • 2 cupswheat flour
  • 3/4 teaspoonBaking Powder
  • 1/2 cupLukewarm Milk
  • 1 teaspoonSugar
  • 1 tspblack sesame seeds / til
  • 1/3 teaspoonSalt
  • 3 tablespoonsCurd
  • 2 tablespoonsOil
  • 1 tablespoonGhee
  • For Stuffing
  • 1/2 cupgrated Paneer
  • 1 teaspoongrated Ginger
  • As neededchopped Coriander Leaves
  • 2/3Green Chillies, finely chopped
  • 1/2 teaspoonChaat Masala Powder
  • 1/4 teaspoonBlack Pepper Powder
  • To tasteSalt
  • As neededcoriander leaves, finely chopped
  • As needed butter

Steps

  1. 1

    Firstly Sieve ata in a large bowl. Add baking powder, salt, sugar, milk, curd, ghee and oil and mix well.

    Add water as required and knead smooth dough. cover dough with a wet cloth. Let it set at room temperature for 2 hours.

  3. 3

    After 2 hours, knead it again for a minutes and divide it into equal portions. Give each portion a round shape of ball.

  4. 4

    For stuffing. Take grated paneer, grated ginger, chopped coriander leaves, chopped green chilli, chaat masala powder, black pepper powder and salt in a medium bowl mix well.

  5. 5

    Now take a ball and dust with maida.further roll and stuff paneer stuffing.
    bring the edge to center and give ball shape and sprinkle some black sesame seeds and coriander leaves.
    gently roll to round shape using rolling pin.
    brush with water over kulcha and flip the kulcha on hot tawa.

  6. 6

    Gently press the kulcha. now after a minute, flip the tawa upside down and cook kulcha directly on flame till they turn golden brown and puffs up..gently scrape the kulcha from bottom and remove. also brush some butter. finally, serve paneer kulcha with curd,chola,salad.
