Season the gyro meat with salt and pepper, then bake in the oven for 45 to 60 minutes. Mix 2 tablespoons mustard and 1 tablespoon olive oil into 1 cup (240 ml) water, then pour it over the meat.

Lightly toast the pita bread in the oven for about 5 minutes. Now you're ready to assemble.

About 15 minutes before the gyro is done, fry the potatoes so everything is ready at the same time. In a skillet with oil or sunflower oil (once hot), add the potatoes cut into thin strips and fry until golden.

Take a pita, add your favorite ingredients—mustard, tomato, onion, gyro meat—then wrap it tightly in parchment paper.
