Simple risotto

My son loves Risotto but I don’t always have the patience to stir it for what seems like forever lol! This is my favorite recipe because it’s quick yet yummy. I don’t add salt at all because I find the stock cubes to be salty enough already.

Steps
- 1
Heat oil and butter together, then fry garlic and onion until soft.
- 2
Add the rice and stir until mixed.
- 3
Add the boiling stock, and continuously stir until rice is cooked al dente.
- 4
Add Parmesan, mix and serve with your choice of vegetables/salad etc.
- 5
I served mine with Crumbed chicken and a green salad.
