After my trip to Jerusalem, I’ve made this easy and healthy meal at least once a week. I can tell you, the delivery guy misses me now!

Place the soaked chickpeas in a blender. Tip: To skip soaking each time, cook a large batch of chickpeas once and freeze them slightly cooked for later use.

Add the onion, spices, olive oil, flour, and parsley, and blend until combined.

You can put the mixture in a bowl and chill it in the fridge for a bit, or cook it right away.

Shape the mixture into small balls and gently flatten them. Arrange them on a baking sheet and bake on both sides (you can also fry them, but they often fall apart and become heavier from the extra oil).

For serving: Spread your favorite sauce on the pita bread. It could be tahini with a little lemon, yogurt with olive oil, or even tomato sauce. Add the falafel, tomato, and lettuce, and enjoy right away or take it with you for lunch the next day.
