Ingredients

  1. 1 1/4 cupunbleached all purpose flour
  2. 3/4 tspbaking soda
  3. Pinchsalt (1/4 tsp)
  4. 1/2 tspcinnamon
  5. 1/2 cupwhite sugar
  6. 1/4 cupvegetable oil (or any light tasting oil- not olive)
  7. 2room temp eggs
  8. 1/4 cupfull fat sour cream
  9. 2very ripe bananas, mashed
  10. 1 1/2 tsppure vanilla extract
  11. 1/2 cup(or to taste) chocolate chips

Cooking Instructions

    Preheat oven to 375°F

    In a bowl, mix the first 4 ingredients and set aside

  3. 3

    In another bowl, mix sugar, oil, extract and eggs and beat on medium speed for 2 min. Add mashed bananas and mix another 1 min

  4. 4

    Pour 1/2 the flour into the mixture and mix for few seconds until combined

  5. 5

    Mix in the sour cream until well blended.

  6. 6

    Next put in the rest of the flour mix until just Blended, do NOT overmix.

  7. 7

    Stir in chocolate chips

  8. 8

    Fill 12 muffin tins, or 24 mini muffin tins. I baked these minis for 14 minutes. Regular size muffins I'd say 20-24 min
