I remember demoing mexicorn to give out samples at my old job at the grocery store and decided to make my own twist on it

Cut chicken into bite sized pieces and cook in pan with olive oil, chilli powder, and a little season salt. Put aside

In same pan mix mexicorn with salsa of choice until defrosted.

Add cream cheese (I use about 3 Oz but it's up to you) and about a handful of shredded cheese. (I'm horrible with measurements, I throw it all in).

I add tapatio for extra spice and let simmer until completely mixed and melted.

Add crumbled tortilla chips on top with a little more shredded cheese. Cover and serve when tortilla chips have softened a little.

Enjoy as a dip, in a tortilla, or by itself!
