Prawns Chow Mein

You can make this recipe with chicken also, but in that case use chicken stock instead of vegetable stock. If you don't get fresh stock use stock cubes. But fresh ingredients make the dish better. Oyster sauce is the main sauce used to make Chow Mein, but I like to add a little soy sauce too. You can skip adding it if you want. You can also use any other vegetables of your choice. Broccoli & bell peppers would make the dish colourful. Make sure you don't cook the noodles or the vegetables too much in the initial stage, then everything will be overcooked in the end. Be careful while adding salt, the sauces are salty. This might not be the traditional Chow Mein Recipe. I don't believe oregano is used 😉 So if you don't want to then skip it.

Cooking Instructions

Peel the prawns & take the vein out. Marinate the prawns with one teaspoon soy sauce, salt & 1/2 teaspoon pepper.

Add salt & half a teaspoon of dried oregano in a pot filled with boiling water. Add egg noodles into it. Cook for about a minute or till the block becomes loose(40% cooked). Drain & set aside. You can also use fresh egg noodles.

Finely chop ginger & garlic.

Chop mushrooms, onion, bok choy, broccoli, baby corn or any other vegetables you're planning to use.

Heat some oil & fry the prawns. Keep it aside. You can also add the prawns along with the vegetables, but if you fry it separately the prawns will have more flavour.

Add one tablespoon of oil & put chopped ginger garlic into it. Saute till brown.

Turn the heat to high. Add onion. Stir fry for a minute

Add mushrooms, baby corn & bok choy next. Stir fry for a minute

Add the rest of the vegetables & saute for about 30 seconds.

Prepare the sauce by adding the oyster sauce, vegetable stock, 1/2 teaspoon of black pepper & 1 teaspoon of soy sauce.

Add noodles & pour sauce over it. Stir fry till all the water in the sauce evaporates. Add salt if needed.

Add the cooked prawns. If you added it along with the vegetables ignore this step. Mix & serve hot.

I have been making this for years. But I used to buy the chow Mein packet mix. I thought 'how hard could it be to make it myself?'. The answer is 'really easy!'. It's basically oyster & soy sauce, ground cumin & coriander, throw in some chicken and veggies of your choice and some noodles. That's about it! Veggie Packed Chow Mein Veggie Packed Chow Mein
A healthy-ish spin on the chow mein we all love from asian restaurants. Some of the noodles are just replaced with ALL the vegetables. This is best prepared in a wok, but if you cook with a electric stove a large sautee pan with high sides will do. I use dried noodles called "Wok Nudeln" here in Germany. I never saw the equivalent in the states, but then again I wasn't looking. It will work with any asian egg noodle, however. You will just skip adding water to the pan when cooking the noodles. If you're lucky enough to have access to fresh noodles, you don't need to do anything extra. If you're using the longer noodles that come kinda like blocks you should blanch them just until they separate. Remove from heat and toss with sesame oil. Garnish with scallion greens and dried chili peppers. Goes great with stir fry. Jon Valdez -
