Ingredients

  1. 3 cupscooked chicken cubed
  2. 1/2 cupBBQ sauce
  3. 6 cupsromaine lettuce chopped
  4. 3/4 cupranch dressing
  5. 1 cupcorn canned or thawed from frozen
  6. 1canned black beans rinsed and drained
  7. 1 cuptomatoes seeded and diced
  8. 1 cupjicama diced
  9. 1 cupMonterey Jack cheese shredded
  10. 1avocado diced
  11. 1/2 cupgreen onions thinly sliced
  12. 1 1/2 cupstortilla strips

Cooking Instructions

20 minutes
  1. 1

    Place lettuce, corn, black beans and jicama in a large bowl and toss 1/2 cup of the ranch dressing.

    Arrange the tomatoes, avocado, green onion and tortilla strips over the lettuce

  3. 3

    Toss the chicken in the BBQ sauce and place it on top of the lettuce.

  4. 4

    Drizzle with remaining 1/4 cup of ranch dressing and addictional BBQ Sauce.
