Ingredients

  1. 2.2 lbsground beef with fat (adjust fat to your preference)
  2. Salt to taste, but don't overdo it
  3. 1 teaspoonblack pepper
  4. 1/4 teaspooncumin
  5. 1little grilled meat spice mix, or you can skip it
  6. 1hot chili pepper
  7. 1small green bell pepper, finely chopped
  8. 1little less than 1/4 bunch cilantro, finely chopped by hand
  9. 1little less than 1/4 bunch parsley, finely chopped by hand
  10. 1very small onion, finely chopped with 1 garlic clove
  11. 1 teaspoontomato paste

Steps

  1. 1

    Mix all the ingredients except the meat. Once combined, add the ground beef and mix well. Cover and refrigerate until chilled.

  2. 2

    Shape the mixture onto skewers, making sure not to use too much meat on each skewer. Refrigerate again until ready to grill.

  3. 3

    Note: The key to keeping the kofta from falling off the skewers is to use very little onion and other ingredients compared to the meat.

  4. 4

    Also, make sure to chill the meat mixture well so it doesn't fall apart while grilling.

  5. 5

    The meat should contain fat to give it a delicious, smoky flavor.
