Ragi Poori (Fingermillet poori)

Poori is a favorite breakfast in many homes, especially on Sundays. It's my family's favorite too. As I keep exploring on how to increase the health factor in my cooking, I stumbled upon this idea of making ragi pooris. Having tried a few times now, I can confidently say that it tastes much better than regular wheat pooris (Sorry, no maida based bhature for me!).
Ragi (fingermillet) is rich in calcium and iron. It's highly beneficial for children and women. I incorporate ragi in the form of idlis, dosas, porridge, kanji and now pooris too.

Steps

20 mins
  1. 1

In a wide bowl, take ragi flour, wholewheat flour, salt and ajwain seeds

  2. 2

Mix all the dry ingredients together

  3. 3

Add water little by little and knead together to form a stiff dough (not as soft as chapathi dough)

  4. 4

Cover and keep aside for atleast 15-20 minutes

  5. 5

Make small balls out of the dough

  6. 6

Dust the rolling board. Roll each ball into slightly thick circles using a rolling pin. Don't roll very thin like phulkas

  7. 7

In a deep frying pan, heat oil. Once the oil is hot, reduce the flame to medium

  8. 8

Carefully drop each rolled poori into the oil. Press it gently using the back of a ladle

  9. 9

When the poori puffs up, turn to the other side and let it fry until the sizzling sound stops

  10. 10

Take it out onto a flat plate or a casserole

  11. 11

Serve hot with either veg kurma, channa masala or potato bhaaji
