Roast pork is our staple Sunday dinner but it's never boring as I season it in many different ways. My Asian rub is very popular with the children but this is too as long as I don't add any extra chilli powder!
If you don't like any heat just leave out the chilli and cayenne. The marinade is delicious either way!

Preheat the oven to gas 4 / 180C / 350F and ready a lined roasting tin with a wire rack attached

Mix the spices with the oil to form a paste. Let stand for 15 minutes to allow the flavours to meld together

Let the pork joint sit out at room temperature while the marinade stands

Pat the pork dry then rub it all over with the marinade

Put it on the wire rack into the oven and roast for 30 minutes per pound

Let it rest for 15 minutes before slicing. Serve with mexican rice, roasted red onion, bell peppers and sweetcorn
