Coconut Cold Souffle

Soak agar agar in little water (just till covered). Leave for 15-20 mins.

Chop some of the coconut pulp and keep aside.

Blend the rest along with the coconut water in a mixer. Beat the cream till light and fluffy. Keep aside.

Boil the agar agar in the same water till it dissolves and add in the tender coconut pulp mixture and heat a little.

Add vanilla essences and put it in. Mix in the milkmaid.

Strain for any residue of agar agar.

Let the mixture cool but don't let it harden. Then fold in the cream.

Pour into moulds and refrigerate.
