A traditional kokni sweet made using rice and cucumber.
Steps

Remove the cucumber skin and seeds. Grate the cucumber. Cook it in a vessel till the water dries up. Wash the rice, dry it well and grind it coarsely.

In a separate vessel take coconut milk. Add rice and salt. Cook on low flame stirring constantly. Gradually add the cucumber. When the water almost fries up add the sugar, elaichi powder, kesar and pistachios. Mix well. Simmer on a tawa with a light lid till set. You may even bake the kanouli in the oven.
