Ingredients

50 minutes
Serves 2 servings
  • 1.1 lbspotatoes (500 grams)
  • 1 cananchovies
  • 2light cheese wedges (such as Laughing Cow)
  • 2 dashesblack pepper
  • 1small pat of butter
  • 1egg yolk
  • For breading
  • Flour
  • Egg
  • Breadcrumbs

Steps

50 minutes
  1. 1

    Wash the potatoes thoroughly and boil them in plenty of water.

  2. 2

    Once cooked, peel and cut the potatoes into pieces. Mash them with a fork, then add the cheese wedges, butter, black pepper, and egg yolk. Mix well, then add the drained anchovies, chopped into small pieces.

  3. 3

    Shape the mixture into croquettes as you like. I make them round.

  4. 4

    Once all are shaped, coat each croquette in flour, then egg, then breadcrumbs.

  5. 5

    Fry in hot oil until golden brown.
