A quick, easy, and delicious appetizer, starter, or snack.

Wash and dry the potatoes. Boil them in water without salt for about 20 minutes, until they are tender but not falling apart.

Meanwhile, peel the garlic cloves and finely chop them. Place them in a mortar with a little salt and mash well. Gradually add extra virgin olive oil, mixing constantly in the same direction with the pestle, until you reach the desired amount of aioli. Refrigerate until ready to use.

Once the potatoes are cooked, drain them and let them cool slightly.

Peel the potatoes, cut them into bite-sized pieces, and place them on a serving dish.

Add the reserved aioli and mix well with the potatoes.

Drain the tuna well, flake it, and place it on top of the potatoes.

Sprinkle with a little finely chopped fresh parsley, fresh basil, or fresh chives, and serve. Enjoy!
