Gulshela(गुळशेलं) is a famous sweet dish in Vidarbh region of Maharashtra, made from pumpkin and milk.
Steps

Boil and reduce milk till half.

Boil grated pumpkin in little water. Add sugar when water is reduced totally. Let sugar dissolve completely.

Add milk to pumpkin. Let it boil.

In a separate pan take ghee and roast rice flour for 2 mins. Add 1/4 cup milk and stir continuously to avoid lumps. Add this paste to pumpkin and milk, stirring continuously.

Boil for another 2 mins and your Gulshela is ready. Garnish with dry fruits. Enjoy as a dessert or you can eat with Roti.
