Ever since I got an air fryer, I’ve been able to enjoy fried and baked foods without worrying about too much oil and fat!

Soak the wood ear mushrooms in cold water for 30 minutes, then rinse and slice into thin strips. Cut the carrot into thin strips. Cut the glass noodles into small pieces. Mix everything together with the eggs and season with chicken bouillon powder, black pepper, shallot, garlic, and fish sauce.

Use 6-inch (16 cm) rice paper wrappers (small size, easy to roll). Before rolling, prepare a little water to moisten the rice paper for easier wrapping.

Since I use an air fryer, lightly brush a thin layer of oil on the egg rolls before air frying to prevent them from drying out.

First: Air fry at 320°F (160°C) for 15 minutes to cook the filling evenly. Second: Air fry at 400°F (200°C) for 5 minutes. Third: Flip the egg rolls and air fry for another 5 minutes to make the outside crispy and golden brown.

Mix a sweet fish sauce dip with garlic and chili, and add some cucumber slices to enjoy!
