My version of buffalo wings, toned down a little to suit my palette. If you like 'em with a bit more of a kick, don't be afraid to up the ante on the cayenne 🌶 😸

Mix the dry rub thoroughly...

...and massage well in to the wings

Dredge on as much of the remainder as will stick, and put the chicken on a baking tray or in an oven proof dish

Cook in the oven at gas mark 5, 190°C or 375°F for 35-40 minutes. The chicken is cooked if the juices run clear when pierced with a skewer. If using a meat thermometer, the temp. should be 75°C or 165°F

Remove from the oven and allow to rest for several minutes. Alternatively, deep fry at 180°C or 355° F for about 1 minute until the skin is crisp

Finally, toss the wings in the sauce, or serve it as a dip. I'm using Frank's Redhot Buffalo Wings Sauce

Serve with vegetables and potatoes or with a crispy coleslaw/salad
