Baked instead of fried, so they're a bit healthier. These make a great appetizer or game day snack or even a yummy lunch. (This pic is actually of my creamy salsa taquitos, but they end up looking the same).

Ingredients

  1. 2 cupsshredded chicken (I used chicken cooked in my slow cooker
  2. 4 oz.cream cheese, softened to room temperature
  3. 1/2 cuponion, finely diced
  4. 1/4 cupbuffalo style sauce (Frank's or Sweet Baby Rays)
  5. 1/2 cupblue cheese crumbles
  6. 1/4 tsp.garlic powder
  7. to tastesalt and pepper
  8. flour or whole wheat tortillas (6 or 8 inch size)
  9. Olive oil, for brushing
  10. ranch or blue cheese dressing (optional for dipping)

Cooking Instructions

    You can use corn tortillas rather than flour, if you'd prefer. If so, warm them slightly to make them less likely to tear when rolling***

    Preheat oven to 350°F. Line a baking tray with foil and grease it. Set aside.

    In a medium bowl, stir together the softened cream cheese, buffalo style sauce and blue cheese crumbles (If you're not a fan of blue cheese, feel free to use a different shredded cheese in place. Pepper jack would be good!). Add the seasonings and taste. Adjust to suit your tastes.

    Stir in the onion and chicken and mix all together.

    Lay out one tortilla at a time and place about 2 tbsp. of chicken mix onto the center, in a line.

    Roll the tortilla up tightly and place on baking tray, seam side down. Repeat until there is no more mix left. Brush the tops of the taquitos lightly with olive oil.

    Bake for 12-15 minutes, until they begin to lightly brown. Serve with either ranch or blue cheese dressing to dip them in.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
