Fry sliced shallots till crispy and set aside

Pan fry chicken thigh till the skins are frisky. They don’t need to be cooked through yet. Set aside and slice into bite size

Fry ginger in the chicken oil till edge is abit brown.

Add chicken, rice wine, sesame oil and a pinch of salt. Bring it to boil and simmer for 10 minutes

Add rice and gojiberry and mix it well. Add more rice wine or sesame oil or salt. Mix well and serve!
