This is an one pot dish u can make it easy and can never go wrong. Adding mint elevates the dish to a different level.
Steps

Chop onions and tomatoes. Grind shallots giner and garlic
- 2
Temper cinnamon kalpasi and fennel in gingelly oil. Then add onions, curry leaves and chillies. Saute until translucent.

Add tomato and little sale and cook until tomato is mushy.

Then add chicken and saute for a minute

Add the shallots paste and salt. Cook until raw smell of onion goes.

Then add all the masala powders

Cook until oil separates

Add little water and cook until chicken is cooked completely and the masala gets thick.

Add mint and cook for two minutes

Chettinad mint masala chicken is ready
