I had some(1 cup) leftover whole moong khichdi made of some herbs like coriander and mint. Thinking of utilizing this healthy khichdi in some interesting way. Hence made some paratha using this herbal khichdi and some extra spices. They came out very delicious.

I had some(1 cup) leftover whole moong khichdi made of some herbs like coriander and mint. Thinking of utilizing this healthy khichdi in some interesting way. Hence made some paratha using this herbal khichdi and some extra spices. They came out very delicious.
Steps

Take 1 cup of leftover khichdi in a mixing bowl.

With a potato masher, smash khichdi coarsely.

Add in spices like crushed cumin-coriander seeds, pomegranate seeds, chilli flakes and salt.

Add in 1 cup of wheat flour.

With the help of little water, make a soft dough.

Divide the dough into small balls.
- 7
Roll each ball into a little thick chapati.

Roast it with little oil in a hot griddle until golden brown.

Similarly, roast all the parathas into golden brown.
- 10
Serve hot with some yoghurt or pickle.
