Heat oil in a heavy bottomed pan/kadai.Add fenugreek seed and let it be blacken.

Add chopped onion,fry till translusent,add ginger garlic paste.Stir for 10 seconds.Add 2 tbsp water and cook for 2 minutes on low flame.

Add all powdered spices except garam masala.Add salt also.Stir.cook till oil separates.Add chopped spinach.Mix.

Add 1 cup water,cover and cook on medium heat for 8 minutes. Stir spinach and dry water if any.

Add garam masala powder and chopped coriander leaves.Mix.Put off flame.

Cover the pan and leave for 5 minutes.Serve with roti/paratha.
