Make birasta of onion, then grate cooking papaya keep aside, take skinless almonds and cashewnuts keep ready aside..take grinder add curd,fried onion,almonds and cashewnuts..make a paste keep ready

Once the paste is ready add grated cooking papaya (raw papaya), add ginger garlic paste,red chilli powder,salt,garam masala powder,black pepper powder,coriander powder and cumin powder mix all very well..now make a deep cuts in raan and marinate with the masala for 3 to 4 hours or overnite..

Now take foil grease with ghee, keep this marinated raan to it close it with foil from all the sides and keep in oven for about 1 hour on 200 degree..let it cool check if it's cooked..then take a pan add ghee to it..and add rest of the marination masala to it..cook till the oil separates now add this cooked raan to it..just mix up with more gravy..and serve hot..with garnished carrots..
