Simple blanched spinach tossed in butter with garlic and freshly crushed pepper. Great way to cut down on salt. When you are guilty of indulging into greasy and spicy meals especially in festive seasons, try this spinach that's quick to make with just a few ingredients.

Stem and clean the spinach. You need leaves only for this recipe.

Boil water with some salt, add spinach. Leave it for a minute, do not cover.

Take out the spinach from water, immediately put it in iced water and leave until you chop your onion and garlic.

Squeeze out the water from the spinach and roughly chop it.

Heat up butter, add garlic, when it changes the colour slightly add chopped shallots, fry for another minute. The flame should be medium-high.

Add spinach and stir fry for 3-4 minutes. If you have used salted butter and blanched the spinach in salty water, you may not need more salt. If required add very little salt now.

Crush some pepper over it and add lemon juice. Switch off the flame and serve hot.
