By using shio-koji, the chicken pieces are tender!
Steps

Cut chicken into bite-size pieces.

Marinate with ground ginger and garlic.

Add Shio-koji, shoyu and mix well. Marinate for 30 min.

Prepare the oil to 170 C. When the oil is about 150 C, put cornstarch on the chicken pieces and deep fry.

Deep fry until lightly brown. Take out the chicken and raise the temperature to 180 C and deep fry for about 1 more minute, gently mixing the hot oil (for even frying).
