Chufa Horchata Granita
Refreshing and perfect for summertime.
Steps

Shake the horchata well in its container before pouring it into a lidded, freezer-safe container.

Once the horchata is in the container, cover it and place it in the freezer. After 30 minutes, take it out and stir the horchata to prevent it from clumping.

Repeat this process every 30 minutes, about three times. When the mixture has turned into a granita, use a fork to break it up.

About 30 minutes before serving, place the container in the refrigerator so it’s not too frozen, or scoop into tall glasses and let them sit in the fridge for a short time before serving.

Optionally, serve with wafer cookies. In Valencia, horchata is often served with 'fartons' (sweet pastries).
