Ingredients

20 minutes
4 servings
  1. 1 cupRefined flour
  2. 1/2 cupSemolina
  3. 1/4 teaspoonBaking Soda
  4. Oil - for frying
  5. 2Boiled potatoes
  6. 1/2 cupBoiled white peas
  7. 8Dry Papdi
  8. 1 cupFresh curd (whipped)
  9. 1/4 cupSev Bhujia
  10. 1/3 cupGreen chutney
  11. 1/2 cupSweet tamarind chutney
  12. 1/4 cupTomato Ketchup
  13. 2 tspRoasted Cumin Powder
  14. 1 tspRed chili powder
  15. 1 tspChaat Masala
  16. 1 tspBlack salt
  17. Salt - as required
  18. 1 tspFinely chopped green chillies
  19. 1 tbspFinely chopped coriander leaves

Steps

    First of all mix flour, semolina and baking soda.

    Then knead it with the help of water.

  3. 3

    The dough should be like poori dough.

    After kneading the dough, mash it well, so that it becomes very soft.

  5. 5

    Now put oil in a heavy bottom pan and heat it.

  6. 6

    Make large dough balls.

  7. 7

    After this, roll big pooris from the dough.

  8. 8

    After rolling, put the poori in hot oil and reduce the flame to medium.

  9. 9

    Press the puri with a spoon, so that it puffs well.

  10. 10

    Fry the puris till they turn golden brown and crisp.

    After frying all the pooris, keep the pooris on the tissue paper, so that their excess oil is removed.

    Cut small pieces of boiled potatoes and add boiled white peas.

    Now add 1/3 of curd, salt, chaat masala, red chili powder, tamarind chutney and green chutney to it.

    Break the papdi into small pieces and add a little sugar to the beaten curd.

  15. 15

    Carefully break off the thin surface of the kachori and place it on a serving plate.

  16. 16

    Now add boiled potato, pea mixture and broken papdi inside the kachori.

  17. 17

    Now pour curd, green chutney, tamarind sweet tomato ketchup.

  18. 18

    Sprinkle sev bhujia, roasted cumin powder, chaat masala, black salt, red chili powder over the kachori.

  19. 19

    Add chopped chilli and chopped coriander leaves and serve.

  20. 20

    Enjoy tasty Shahi Raj kachori.
