Pizza was invented in Naples. The simple margarita was created to honour the queen at the time and resemble the Italian flag, red tomato, white mozzarella and green basil. (So they say). Only the pizza you get in Naples is THE pizza. You haven't tried pizza until you've tried pizza in Naples, trust me. Not even in other parts of Italy can they replicate the original. It's worth going there just to try the pizza!!! But just like Pizzelle fritte are a Christmas Eve tradition for lunch (see my recipe), Pizzette are a New Year's Eve tradition in our house for lunch. Cooking Instructions

Sorry for the pics, my big mixing bowl is orange! Add flour and yeast to a big bowl. Slowly add the water and mix.

As it comes together, add the rest of the ingredients, salt as last. Knead well and shape into a ball. Cover with cling film and leave to rise in a warm place for about 2 hours. I left mine near a radiator 😊

It should have more or less doubled its size. On a floured surface, roll out using rolling pin. In another bowl, mix passata, Glug of olive oil and salt

Using a small pastry cutter, cut out your Pizzette and place on a baking tray. Leave to rest again for about 10-15 minutes. Meanwhile, preheat oven to 200. Using your fingers, squish the middle of each pizza down to make a tiny dent. Add the passata, few mozzarella cubes and basil. Bake for about 12-15 mins 😂
