Ingredients

3 servings
  • 2 bundlesVermicelli Rice Noodle
  • 1big white Onion chopped finely
  • 1Green/Spring onion diced
  • 1Red Capsicum, cut evenly into 2,5cmx1cm
  • 1Green Capsicum, cut evenly into 2,5cmx1cm
  • 6 rashersShoulder Bacons, pre-fried then cut into 2.5cmx1cm
  • 2 clovesGarlic smashed then chopped finely
  • 1tsb minced Ginger
  • 2Carrots grated
  • 1 tbRice Bran oil
  • 2eggs lightly beaten
  • 1 handfulBean sprouts
  • 3 stalksSpring or green onions, green part cut 1" pieces
  • 1/2 cupvege Rice Bran Alfa Oil
  • 2 pinchKashmiri Red Chili powder
  • 1 tbswater
  • Oil for frying
  • The Sauce:
  • 1 tbsMadras curry powder
  • 1/4 tspsalt and black pepper/white pepper powder
  • 1 1/2 tbsThai Seasoning Soy sauce
  • 1/2 tbsFish sauce
  • 2 tspSesame seeds oil
  • 1tps of Sambal Oelek (mild chili paste)

Steps

    In a pot put water, let it boil then put on the vermicelly soak for 3 minutes. Drain, set aside. In a wok with 1 tbs hot oil fry the bacon rashers until crisp, remove. Cut into bite pieces, and keep aside.

    In a wok, warm the wok and put the oil, then add the onions, stir until soft. Add the eggs make a scramble &swirl for 30"then push aside&add I tbs oil,then add the garlic, ginger & the prawns& stir fry till change colour.Season with pinch of salt and stir-fry for 30". Take it out both eggs & the prawns, set aside. Add 1 tbs oil, onions, stir-fry 2' then add curry powder, the red kashmiri chili & cook 2"until fragrance, then add capsicum, carrots & stir-fry 30".

    Add in the Vermicelli noodle, and stir in everything cook for 1', Then add the Thai Seasoning Soy, Fish sauce, sugar and a bit of water, mix evenly well. Cook until the water evaporates. Taste the seasoning.

    Then lastly add the Bacon pieces, Green onions pueces, Bean Sprouts and sesame oil and mix well all together keeping the stir fry for 1'. Turn off the heat. Remove transfer into a large serving dish. Garnish on top with diced green onion or a a few of coriander leaves.Serve warm with Sambal Oelek or any chili sauce.🍝🌶

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking. Cooking is just fun and a relaxing moment to enjoy food around the table with my family 😚 🤗
