Just threw this together to use up what was in the fridge. But OMG it was delicious.

Ingredients

1-2 servings
  1. 1 cupJasmine Rice
  2. 1 Tbspcooking oil of choice
  3. 2 TbspThai Green Curry Paste
  4. 2-3 leavessilverbeet (Swiss Chard)
  5. 2 cupsfresh pineapple (cubed)
  6. 3 Tbspchopped peanuts or cashews
  7. Coconut yogurt to garnish
  8. Salt and pepper to season

Cooking Instructions

  1. 1

    Cook rice as per packet directions.

    Heat oil and paste on medium high heat for 3 min.

  3. 3

    Remove stalks from silverbeet and finely chop.

  4. 4

    Add chopped silverbeet stalks and pineapple to frypan and stir to coat in paste.

  5. 5

    Cook on medium-high for another 5 min.

  6. 6

    Add shredded silverbeet leaves and carefully stir.

  7. 7

    Continue to cook until silverbeet wilted and cooked to your liking.

  8. 8

    Add chopped nuts and stir 1 min.

  9. 9

    Plate pineapple curry over rice, top with dollops of coconut yogurt and season to your liking.
