Nona's Homemade Cappinetti

My Nona had 11 babies in Sicily ( my dad was one of the siblings) her cooking lives on to my generation and to my kids !! This recipe is easy, tasty and budget friendly. And as always you can add or take away in recipes to fit your taste.

Cooking Instructions

Cook bacon as normal, reserve grease and set aside.

Boil noodles for 5-8 mins until Al dente drain water (do not rinse !!!)

Carmalize sweet onions until soft, tender and light brown in color.

Add sweet onions to pot of noodles and slowly stir in 1-2 tbsp of reserve bacon grease. Break up bacon into bits add to noodles and onions. Add fresh baby sweet peas if desired.

Top with fresh scallions for garnish.

To recreate the yellow blossoms, I added scrambled eggs.It looks colourful and you can enjoy the taste of spring.After the pasta is cooked, toss with olive oil straight away. This prevents the pasta from sticking and will give it a nicer texture. The amount of seasonings are a rough estimate, so check the taste and adjust the seasoning.
