Authentic Chicken Tikka Masala😍🥘🍅🌶🐥

Made with spiced Tikka yoghurt marinated overnight chicken thighs, then cook in cast iron skillet saucepan over high heat to get the golden pieces and with creamy sauce curry. To serve with steamed basmati rice and Naan bread or the garlic Flatbread (see my recipe). 😗

Ingredients

8 people
  • 800 g (28 oz)boneless chicken thighs cut into bite-sized pieces
  • 1 cupplain Yoghurt
  • 1 tbsminced garlic
  • 1 tbsgarlic paste
  • 2 tspgaram masala
  • 1 tspground Cumin
  • 1 tspground Coriander
  • 2 tspfenugreek
  • 1tps Turmeric
  • 1 tspKashmir red chili (mild chili) or 1/2 tsp
  • 1/2 tspCayenne powder (for the amount is
  • adjust the heat preference to your taste)
  • 1 tspsalt
  • For the sauce:
  • 2 tbsRice Bran Oil (Alfa one brand)
  • 3-4 tbsbutter
  • 2small Onions or 1 large Onion finely diced
  • 1 1/2 tbsgarlic finely chopped
  • 1 tbsginger finely grated
  • 1 1/2 tspgaram masala
  • 1 1/2 tspground cumin
  • 1 tspturmeric powder
  • 1 tspground coriander
  • 400 g (14 oz)tomato puree (Tomato paste or tomato passata)
  • 1 tspKashmir red chili (Optional for colour &
  • flavour, it's mild chili)
  • 1 tspground red Cayenne Pepper powder (adjust to
  • adjust to taste preference of heat)
  • 1 tspsalt
  • 1 1/2 cupsdouble thick cream (or 1 cup Coconut Cream Milk)
  • for lower calories)
  • 1 tspbrown sugar
  • 1/4 cupwater if needed to thin the sauce
  • 4 tbsfresh Coriander (Cilantro) leaves to garnish

Steps

    In a bowl combine chicken with all the ingredients for the chicken to marinade. Let it mnarinade for 10 minutes-to an hour or overnight is better.

    Heat oil in a skillet or large base pot over medium-high heat. When sizzling add chicken pieces in batches of 2-3 pieces at a time, to seared the chicken to get golden pieces while making sure not to crowd the pan otherwise the chicken will be simmering in juices. Fry until browned for only 3 minutes on each side. Set aside and keep warm.

    Melt the butter in the same pan. Fry the onions until soft about 3 minutes, while scraping up any browned bits stuck on the bottom of the pan.

    Add garlic & ginger and saute' for 1 minute until fragrant then add garam Masala, cumin, turmeric and coriander, fenugreek. Fry about 20 seconds until fragrant, while stirring occasionally.

    Pour in the tomato puree, cayenne pepper powder and salt. Let simmer for about 10-15 minutes, stirring occasionally until the sauce thickens and becomes a deep brown red colour.

    Stir in the cream and sugar through the sauce. Add the chicken and it's juices back into the pan and cook for a furthern 8-10 minutes until the chicken is cooked through and the sauce is thick and bubbling. Pour in the water to thin out the sauce, if needed.

    Garnish with the fresh herb Coriander leaves and serve with hot steamed Basmati Rice and Naan flat bread or any Flatbread.😍😋

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
