For my father's birthday, while my mom made a delicious tiramisu, I decided to try making these cocoa shortbread cookies. My boyfriend and I already devoured one (we split it in half) 😉 You can make them any size you like, using a glass (like I did) or a small cup to cut them out. Gather all the ingredients and start by making the cocoa shortbread dough. You can mix it by hand or use a food processor. I mixed it by hand.

Sift the flour together with the cocoa powder and powdered sugar.

Pour the cocoa flour mixture onto a work surface, make a well in the center, and add the cold butter (cut into small cubes) and the whole egg. Quickly mix everything together using a spatula to avoid warming the dough too much.

Once the dough is smooth, shape it into a ball, wrap it in plastic wrap, and chill it in the refrigerator for about 30 minutes.

After chilling, roll out the cocoa dough between two sheets of parchment paper to about 1/8 inch thick (3-4 mm).

Cut out rounds using a 1 1/2- to 2-inch (4-5 cm) round cookie cutter or a small cup. For larger cookies, use a bigger cutter or a glass.

Place a generous teaspoon of Nutella in the center of half the rounds. Take the remaining rounds, gently soften the edges with your fingers, then place them over the Nutella-filled rounds and press the edges well to seal. Arrange the filled cookies on a baking sheet lined with parchment paper.

Bake the Nutella-filled cookies in a preheated oven at 350°F (180°C) on the conventional setting for about 15-20 minutes.

Once baked, remove the cookies from the oven, let them cool completely, and dust with powdered sugar.
