Ingredients

  • 12medium potatoes
  • 2 cupscooked peas
  • 1 cupgreen maize
  • 1 handfulyoung pumpkin leaves
  • 2 tablespoonsmoringa
  • Spring onion
  • 1leek
  • 1/2 teaspoonbaking soda

Steps

  1. 1

    Peel the potatoes wash them

  2. 2

    Put the cooked peas n maize together with the potatoes.season with salt boil till the potatoes are ready.drain the water

    Cut the pumpkin leaves.boil them in 1/2 cup of water with baking soda for 5 minutes then blend add the moringa

    Dice the spring onion and leek fry in 4 tablespoons of oil till tender and set asideh

    Mash the Mukimo with the blended mixture

    When fully mashed add the onion and leek and stir and serve
