Ingredients

  • 1whole of free range chicken cut into pieces
  • 5of garlic, thinly sliced
  • 7shallots, thinly sliced
  • 13bird's eye chilli
  • 6salam leaves (or bay leaves as a substitute)
  • 6kaffir lime leaves
  • 3 stalklemon grass, bruised
  • 3 cmgalangal, bruised
  • Thick coconut milk
  • to tasteSalt, sugar and stock
  • Banana leaves enough to wrap

Steps

  1. 1

    Rub the chicken with lime juice and wash.
    Mix chicken, sliced ​​garlic and shallots, salt, sugar and stock. Squeeze the chicken and set aside about 30 minutes.

    Add the chillies, then take a sheet of banana leaves, place pieces of lemongrass, bay leaves, and galangal.
    Spoon the chicken mixture and add coconut milk to taste

    Wrap and embed with sticks, steam with low heat 1 hour until completely cooked.
    Garang Asem is ready to be served with any dish you like.

    Note:
    This Garang Asem Recipe should use starfruit or grean tomatoes or red tomato. But because there are no starfruit seeds here in Australia and I also don't have tomato stock, so just use only simple spices. 😍
