Most Kenyan meals or rather African meals are already vegan. So finding a meat substitute for pilau was not that much of a problem considering how flavorful and versatile mushrooms are. They have a meaty consistency that when well seasoned will blow away your mind. Served this to my non-veg family and the reviews were raving. Try it out and let me know how it goes 😌

Ingredients

  1. 200 gbutton mushrooms diced
  2. 1large onion diced
  3. Crushed garlic and ginger
  4. 1 bunchcoriander
  5. Olive oil
  6. 2 cupsrice
  7. 4 cupswater
  8. 2 tbspstore bought pilau masala spice blend
  9. 1 tspmustard seeds
  10. Diced dill
  11. Shredded slaw
  12. 1purple cabbage
  13. 1onion
  14. 1grated bell pepper
  15. Sweet corn
  16. 1grated carrot
  17. Juice of 1 lime
  18. Apple cider vinegar
  19. Olive oil
  20. Black pepper

Cooking Instructions

    To a sufuria add olive oil and your mustard seeds. Sautee your onion, garlic and ginger until brown

    Add in your mushrooms and cook them down for about five minutes while stirring

  3. 3

    Proceed to add in your pilau masala and any other spices you wish to add before placing your rice and water in and covering everything up for about 12-15 minutes to allow the rice to cook

    At this point you proceed to make your slaw as the pilau is cooking. Chop up and grate your ingredients then mix everything up in one bowl. In a separate bowl mix in your acv, black pepper and olive oil to make your vinaigrette and drizzle it over your slaw as the dressing.

    Once the rice is cooked and ready, fluff it out with a fork and serve. Enjoy🍽️
