Ingredients

2-4 servings
  • 1/4Sweet Onion (chopped)
  • 1/2Red Bell Pepper (chopped)
  • 5 ozBaby Shitake Mushrooms (whole or roughly chopped)
  • 1 CloveGarlic (finely diced)
  • 6 SprigsCilantro finely chopped
  • Juice of 1 Lime
  • 2 TspApple Cider Vinegar
  • 2 TbspPaprika
  • 1 TbspDried Parsley
  • 2 TspCumin
  • 1 TspDried Oregano
  • 1 TspDried Dill
  • to tasteSalt and Pepper

Steps

  1. 1

    Wash all Vegetables, and chop accordingly.

  2. 2

    Place all ingredients into a Ziploc bag, or food container, and shake to mix well.

  3. 3

    Marinate in Fridge for 30-90 min.

  4. 4

    There you go! Ready to use in tacos, sandwiches, dinner platters...YOU name it!

I added diced potatoes in as well, and it made it nice and bulky for a sloppy joe style sandwich
