Ingredients

  1. 4 lbscatfish
  2. 4onions chopped
  3. 1green bellpepper 1 red bellpepper
  4. 2 tbsroux
  5. 1 cantomato sauce
  6. 1 canrotel
  7. 1 cancream of mushroom
  8. 1 cancream of celery
  9. 2 tbsCajun seasoning
  10. 1 tspsalt
  11. 1 tspblack pepper
  12. 1 tbsgarlic powder
  13. 1 packGreen onions chopped I did
  14. Red pepper is optional

Cooking Instructions

    Make a roux or buy jar roux I did 1/2 cup grease to half cup of flour and had a little extra

    Melt butter and add roux, then add rotel, tomato sauce plus half of the can of water, onions, peppers and season and simmer for a hour.

    Add cream of mushroom an cream of celery now I added little bit of water not much bc the fish gonna have water in it an I checked my seasoning to see if I need more, then let simmer for 30 mins.

    As catfish an green onions an let simmer for 20 more mins then it will be done, serve over rice.
