I was trying to use up leftover ingredients and avoid buying anything additional, partly because my budget's a bit tight this period. Casting my mind back on various fish stew and peperonata recipes I've read over the years, I decided to improvise.
Quick Fish Stew
I was trying to use up leftover ingredients and avoid buying anything additional, partly because my budget's a bit tight this period. Casting my mind back on various fish stew and peperonata recipes I've read over the years, I decided to improvise.
Cooking Instructions

Slice peppers and tomatoes thinly.

Layer veggies in pot and top with onion and garlic powder and paprika.

Arrange butter so that it will melt generally evenly over the veggies.

Cover and cook over low heat while preparing the fish.
- 5
Slice fish into bite-size pieces and mix well with pepper, salt and oil.
- 6
Gently fold fish into veggie stew (colours should still be bright and tomatoes half disintegrated), cover and simmer until just boiling.

Remove from heat and serve hot with couscous or your preferred alternative. Enjoy!
