Gluten free chicken and chorizo pasta bake

Ingredients

Serves /makes 4 servings
  1. 200 ggluten free pasta
  2. 1 tablespoonolive oil
  3. 2chicken breasts, cubed
  4. 1onion, diced
  5. 1red pepper, diced
  6. 2garlic cloves, crushed
  7. 100 gchorizo sliced
  8. 300 gpassata
  9. 125 mlcream
  10. 2 teaspoonsmixed herbs
  11. salt and pepper for seasoning
  12. Handfulgrated cheese grated

Cooking Instructions

  1. 1

    Preheat the oven to 180°C

  2. 2

    Bring a large pan of salted water to the boil and cook the pasta for 8 minutes

  3. 3

    In a large pan place the olive oil and garlic on a medium heat

  4. 4

    Add the chorizo and chicken and cook for 5 minutes

  5. 5

    Add in the onion and pepper and saute for 5 minutes

  6. 6

    In a small saucepan place the passata, cream, mixed herbs and season with salt and pepper

  7. 7

    Bring to the boil and simmer for 5 minutes

  8. 8

    Pour the sauce and pasta into the chorizo and chicken mix

  9. 9

    Place into a casserole dish and top with the grated cheese

  10. 10

    Bake in the oven for 15 minutes
