Steps

Boil pasta in a pan with 1/2 teaspoon salt & 1 teaspoon olive oil. (Save pasta water for later)

In a pan put butter and olive oil followed by the chopped garlic and parsley (save little for garnishing), chilli flakes and stir quickly.

Add plain flour & stir then gradually pour milk and keep stirring to avoid any lumps. Add half a cup of pasta water for the right consistency.

Once the sauce is thick enough it's time to add cream and grated processed cheese and mozzarella (save little for topping).

I prefer to add tomato puree/ ketchup to balance the sweetness. At this point of time add the remaining pasta water if required. Now add the black pepper, Italian/pasta seasoning & salt as per the taste.

Once the sauce is ready it's time to add the veggies and boiled corn.

Cook for 3-5 minutes then add cherry tomatoes and boiled pasta. Stir for another 3-5 minutes.

Serve hot with remaining cheese and chopped parsley.
